29 October 2013: The French Cellar in The Straits Times

Chatting over wine, two Frenchmen based in Singapore mulled over the possibility of starting a wine-of-the-month club here.

The duo, Mr Eric Joubert and Mr Vincent Morello, both 30, have launched The French Cellar, roping in experienced sommelier Nicolas Rebut, 38, who is based in France, to choose the wines.

“We will travel from Bordeaux to Languedoc, from Alsace to Burgundy, from Champagne to Provence and so on. A part of France will be brought to Singapore every month.”

Based in France, Nicolas explores vineyards and forges privileged relationships with estates and winemakers in search of exclusive wines at the best value, the gems France has to offer. Nicolas tastes thousands of wine samples each year and selects only the best wines from renowned estates and undiscovered appellations.

He joined three-star Michelin restaurant, “Le Louis XV” – managed by Alain Ducasse, one of the greatest French Chefs – in 1999, where he became Chef Sommelier in charge of the cellar, wine selection and pairing.

In 2005, Nicolas left Monaco to join as Chef Sommelier for Paris’ three-star Michelin outlet, “Le Meurice”, where he managed a team of seven sommeliers. He revolutionalised the wine menu and was responsible for its exceptional wine cellar of over 500, 000 bottles.

Nicolas is also the author – together with Chihiro Masui – of wine-pairing guide and bestseller, “Une affaire de gout”.

In this book, he describes great French wine and Asian cuisine pairings. Examples include: Champagne with Thai green fish curry; Puligny Montrachet with Xiaolongbao; Romanee-Conti with Tuna sashimi; Clos de Tart with Wagyu beef; Pauillac with Peking duck and Pomerol with Yuxiang pork.
